Facts checked 29/10/2026
Is this for me?
- Doing useful work that protects ordinary people's health
- Mixing field visits with science and some law
- Being a government officer with real powers to act
- Dealing with angry shopkeepers or pressure from influential people
- Transfers within the state and long hours on field duty, especially around festivals
- Vacancies are irregular, so you may wait and prepare for years
- Class 11–12 subjects
- No special rule for Class 12 itself, but you need a science stream (PCB or PCM) to get into the degrees that qualify. Chemistry is the common thread. B.Sc or B.Tech in Food Technology, Dairy Technology, Biotechnology, Microbiology, Biochemistry, Chemistry, Agriculture or Veterinary Science all open the door.
- First degree
- A Bachelor's, Master's or Doctorate in Food Technology, Dairy Technology, Biotechnology, Oil Technology, Agricultural Science, Veterinary Sciences, Biochemistry, Microbiology, Chemistry or medicine, from a recognised university. FSSAI can also notify other equivalent degrees. Most students take a 3-year B.Sc or 4-year B.Tech.
- Entrance exams
- Run by each state, usually through the state Public Service Commission or the health / food safety department. The exam and its pattern differ from state to state. The central post of Central Food Safety Officer is filled directly by FSSAI.
- Licence or registration
- None needed to start working.
What the work is like
Visiting restaurants, sweet shops, dairies, factories, markets and street-food sellers. Checking licences and hygiene. Taking food samples and sending them to labs. Issuing improvement notices, helping prosecute offenders, and tracking food-poisoning cases in the area.
A day in the work
You start at the district food safety office, check your sample kit and plan the day's inspections. By mid-morning you are at a sweet shop or dairy, checking the licence, the kitchen, storage and water. If something looks wrong, you take a sample, seal and label it properly and send it to the lab. Afternoons go to writing reports, issuing notices and following up on complaints. Some days, a food-poisoning report means you drop everything and go investigate.
The path, step by step
- Step 1 · Class 11–12Take the science stream. PCB or PCM both work, but keep Chemistry strong. It is the one subject that shows up in nearly every qualifying degree.
- Step 2 · 3–4 years after Class 12Complete a qualifying degree: B.Sc or B.Tech in Food Technology, Dairy Technology, Biotechnology, Microbiology, Biochemistry or Chemistry, or a degree in Agriculture, Veterinary Science or medicine. Check the exact degree name against the rules. A general "B.Sc Biology" or "Life Science" may not be on the list. Ask your college or the state notice.
- Step 3 · After the degreeWatch for your state's FSO vacancy notice. Vacancies come irregularly, not every year. Age limit, fees and exact eligibility are set by each state in its notice. (reported) (reported — check with the official body)
- Step 4 · Written examThe state exam, usually a written test. Papers typically cover the Food Safety and Standards Act 2006, food science, chemistry or microbiology, and general studies. The pattern differs by state. (reported) (reported — check with the official body)
- Step 5 · Interview / document checkSome states add an interview or only verify documents and degrees. This also differs by state. (reported) (reported — check with the official body)
- Step 6 · TrainingThe FSS Rules require you to complete training set by FSSAI at an approved institute before you are appointed. It covers food law, inspection and sampling.
- Step 7 · Posting and probationThe Commissioner of Food Safety notifies you as an FSO for an assigned area, such as a district or a part of a city. Probation length and promotion path follow your state's service rules. (reported) (reported — check with the official body)
Ways in
- State Food Safety OfficerMost jobs are here. The state recruits through its Public Service Commission or health department, and you work in a district or city under the state Commissioner of Food Safety.
- Central Food Safety OfficerFSSAI recruits directly for central posts. In its 2021 advertisement, it asked for a qualifying degree such as Food Technology, Microbiology or Chemistry (master's for Chemistry), or a medical degree. It listed GATE, CSIR or ICAR NET as desirable. Check the latest FSSAI notice before planning around this.

What people earn
Pay is set by each state government and differs by state. We could not confirm one official pay level this year, so check the pay level in your state's latest FSO notification. (reported)
Reported — check the official notice.
Pay depends on the state and its pay scale, and it rises with promotions and years of service; there is no private bonus or commission like in a company job.
Myth and fact
For girls and students with disabilities
Government recruitment normally has reservation and age relaxation for SC, ST, OBC, women and persons with disabilities, but the rules differ by state and we could not confirm them from an official notice. Read your state's FSO notification carefully. (reported)

- Class 7–9Read the labels on five packaged foods at home. Note the expiry date, ingredients and the FSSAI licence number. Ask what each part tells you.Open link ↗
- Class 10–12Do a simple hygiene check of your school canteen or a mess with a teacher's permission. Write down what is done well and what could be better. Pay special attention to storage and handwashing.

Good to know
- The job exists under Section 37 of the Food Safety and Standards Act 2006. The Commissioner of Food Safety appoints FSOs for assigned areas.
- You cannot be an FSO if you have a financial interest in making, importing or selling food. This avoids conflict of interest.
- The Food Safety and Standards Rules 2011 on FSSAI's site set the degree list. Always check your state's own notice, because states add their own age limits and exam patterns.
- Like the degrees, the job suits students who like chemistry and public health. If you prefer the lab or the factory side of food, look at food technologist or dairy technologist.
